Fixings 

RUB 

  • 1 tsp Worcestershire Sauce 
  • 2 tbsp ketchup 
  • 1 tbsp soy sauce 
  • 2 tbsp dark colored sugar (or white) 
  • 1 tbsp olive oil (or vegetable or canola oil) 
  • 1 clove garlic, minced 
  • 2 tsp apple juice vinegar 


Hacks 

  • 4 pork hacks/cutlets, around 200-250g/7-8oz each including bone 
  • 800g/1.6 lb child potatoes, bigger ones cut down the middle 
  • 1 tbsp olive oil 
  • Salt and pepper 


Directions 

  1. Preheat stove to 220C/430F (standard broiler) or 200C/390F (fan constrained/convection). 
  2. Hurl potatoes in oil, sprinkle with salt and pepper. Disperse on the heating plate. 
  3. A spot in the stove for 15 minutes (giving them a head begin). 


PORK 

  1. In the interim, combine the Rub fixings in a little bowl. 
  2. Slather the pork on the two sides with the Rub, saving some Rub for seasoning. 
  3. Remove the plate from the stove. Hurl potatoes at that point push them to the edge. 
  4. Spot pork on the plate. Prepare for 15 minutes. 
  5. Expel plate from the stove, flick to oven/flame broil on high (rack about 20cm/8" from warmth source). 
  6. Flip pork, spoon over saved rub and touch on sides. Cook 7 - 10 minutes until quite all around caramelized.
