Ingredients
FOR THE DRESSING

  • 0.19- cup non-fat plain yogurt
  • 0.25 tablespoon extra virgin olive oil
  • 0.25 teaspoon white vinegar
  • 0.25 teaspoon Dijon mustard
  • 0.5 tablespoons reduced fat crumbled blue cheese
  • salt and fresh ground pepper, to taste


FOR THE SALAD

  • 2.5 cups mixed salad greens
  • 2 ounces shredded cooked chicken breast
  • 1 slices turkey bacon, cooked to the desired crispness and crumbled
  • 0.75 large hard-boiled eggs, sliced
  • 0.25 cup cherry tomatoes, halved
  • 0.25 avocado, sliced
  • 0.13 cup reduced fat crumbled blue cheese


Directions

  1. Prepare the dressing by combining all ingredients in a mixing bowl; whisk together until thoroughly combined. Set aside.
  2. Arrange salad greens on a large plate.
  3. Arrange chicken, bacon, egg, tomatoes, avocado, and blue cheese on top of the salad greens.
  4. Drizzle the salad with previously prepared dressing.
  5. Serve.


To Make The Wraps (OPTIONAL)

  1. Heat low-carb flour tortilla wraps in the microwave.
  2. Spread about 2 tablespoons of the dressing over each flour tortilla.
  3. Place a few salad greens in the middle of the flour tortilla.
  4. Add some chicken, a bit of crumbled bacon, couple slices of eggs, some tomatoes, a slice of avocado, and sprinkle with crumbled blue cheese.
  5. Roll it up tightly; cut in half and serve.
